Chevys Fresh Mex Salsa

Servings: About 2 cups

1 pound tomatos
½ onion
2 jalapeño
2 teaspoons black pepper
1 teaspoon salt
2 tablespoons cilantro

Char tomatoes, onion and jalapeños on a hot pan, griddle or grill. Put charred ingredients in blender. Add in pepper, salt and cilantro. Blend until smooth.

I got a tour 2 days ago from a restaurant manager at Chevys. Here is the bulk
recipe straight from the source (you can extrapolate down or up since this is a
huge batch!)

1 case (2 lbs.) tomatoes (cooking grade, cored)
2 lbs. of large
white onions (peeled)
2-4 jalapenos
Cilantro
Spices

He didn't tell us the
spices but my guess would be salt and garlic - maybe one or 2 other spices. Good

Chevey's does one thing different than most places. The Mexican
chefs take chile peppers, place them on the open flame and burn up the chile peppers until they are done and tender but still
have texture and strength to them. Then peel off the skin
leaving the pepper with a  natural smokey flavor (do not
use liquid smoke- they don't) You can simply do this and add
it to something like fresh salsa by lisa (at the store) or equiv.
I run it through a food processor to a fun rather thick
well blended to a not chunky form. They do too. lazerpete1@hotma il.com
